Saffron & Garlic Mashed Potatoes
Ingredients:
- 2 lbs Yukon Gold potatoes, peeled and quartered
- 1/4 teaspoon Sadaf Saffron Threads
- 1/4 cup milk
- 1/4 cup heavy cream
- 4 tablespoons unsalted butter
- 2 cloves of garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley for garnish
Instructions:
- In a large pot, add the potatoes and cover them with water. Bring to a boil and then reduce the heat to a simmer. Cook for 15-20 minutes or until the potatoes are fork-tender.
- In a small saucepan, heat the milk and cream over medium heat. Add the saffron threads and let them steep for 5 minutes.
- Drain the potatoes and return them to the pot.
- Mash the potatoes with a potato masher or a fork.
- Add the saffron-infused milk mixture, butter, minced garlic, salt, and pepper to the pot.
- Mix everything together until the potatoes are smooth and creamy.
- Garnish with chopped fresh parsley before serving.
Note: You could also add some grated Parmesan cheese or sour cream for an added flavor and texture. These mashed potatoes are perfect as a side dish for roasted meats, poultry or fish.
