Split Pea Soup
- 1 cup Sadaf split pea, soaked overnight and drained
- 6 cups chicken stock
- Salt and pepper, to taste
- 1/3 cup Sadaf crisped fried onion
- 1/2 cup bread croutons
- In a large pot, combine the soaked and drained split peas with the chicken stock. Bring to a boil over high heat.
- Reduce the heat to low and let the split peas simmer for 25-30 minutes, or until they are tender.
- Season the soup with salt and pepper to taste.
- Use a blender or immersion blender to puree the soup until smooth.
- Return the soup to the pot and stir in the fried onions.
- Heat through and serve with bread croutons on top.
