Roasted Mediterranean Chicken
This recipe is a perfect blend of traditional Mediterranean herbs and spices, like cumin, coriander, turmeric, paprika, and cinnamon, all from Sadaf, that gives the chicken a unique and delicious flavor. Ingredients:
- 1 whole chicken, cut into 8 pieces
- 1/4 cup Sadaf extra virgin olive oil
- 1 lemon, juiced
- 2 cloves of garlic, minced
- 1 teaspoon Sadaf ground cumin
- 1 teaspoon Sadaf ground coriander
- 1/2 teaspoon Sadaf ground turmeric
- 1/2 teaspoon Sadaf ground paprika
- 1/4 teaspoon Sadaf ground cinnamon
- 1/4 teaspoon Sadaf ground black pepper
- 1/4 teaspoon Sadaf salt
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
Instructions:
- Preheat the oven to 375°F.
- In a small bowl, mix together the olive oil, lemon juice, garlic, cumin, coriander, turmeric, paprika, cinnamon, black pepper, and salt.
- Place the chicken pieces in a large baking dish and pour the marinade over them, making sure each piece is well coated.
- Roast the chicken in the oven for 45-50 minutes, or until the internal temperature reaches 165°F.
- During the last 10 minutes of cooking, sprinkle the chopped parsley and mint on top of the chicken.
- Remove from the oven and let it rest for 10 minutes before serving.
